What are the bridges and canals in the game?

What are the places where ships can cross land and where land units and cross masses of water?

Well, the only "canals" in this game are the Suez and the Panama Canal, but nobody can own the cities on them. and the "bridges" are really anywhere within a range of something like 0.5 movement from land to land.

Yeah cause sweden finland and norway are ful of lakes and rivers that make sea travel easy
